| 520 | 3 | |a O valor e o consumo de vinho têm vindo a aumentar ao longo dos anos, sendo uma das bebidas alcoólicas mais consumidas em todo o mundo, como tal a região do Algarve não é exceção. A cultura da vinha e do vinho acompanhou toda a história do Algarve desde tempos remotos até à atualidade e o que encontramos hoje reflete todas essas influências e experiências assimiladas ao longo do tempo. Assim, a caracterização qualitativa dos vinhos desta região torna-se importante de forma a monitorizar e acompanhar o seu desenvolvimento e expansão.Para verificar as diferenças entre os vinhos desta região, procedeu-se ao estudo de vinhos tintos de duas sub-regiões pertencentes ao Algarve: Denominação de Origem "Lagoa" e Denominação de Origem "Tavira". Para tal analisaram-se 6 vinhos tintos diferentes, sendo 3 vinhos de Lagoa e 3 vinhos de Tavira.Com este objetivo efetuaram-se análises a 8 parâmetros fisico-químicos: Acidez Total, Acidez Volátil, pH, Teor Alcoólico, Indice de Polifenóís Totais, Antocianinas, Taninos e Cor.Após a realização das análises procedeu-se ao cálculo das médias e desvios-padrão das respetivas amostras para cada parâmetro analisado de forma a poder comparar os vinhos entre si.Para verificar a existência de diferenças significativas entre as regiões em estudo, realizou-se uma análise estatística pelo método ANOVA unidirecional e o teste de Scheffé do programa STATISTICA 7 (StatSoft Inc., EUA), tendo-se encontrado diferenças significativas nos parâmetros: acidez volátil, pH, antocianinas, índice de polifenóis totais, taninos e tonalidade da cor. The value and consumption of wine has been increasing over the years, being one of the most consumed alcoholic drinks in the world, so the Algarve region is no exception. The culture of vineyards and wine has accompanied the entire history of the Algarve from ancient times to the present day and what we find today reflects all these influences and experiences assimilated over time. That said, the qualitative characterization of wines from this region becomes important to monitor and follow their development and expansion.In order to verify the quality of wines from this region, we proceed to the study of red wines from two Algarve sub-regions: Denomination of Origin "Lagoa" and Denomination of Origin "Tavira". For this, 6 different red wines were analyzed, including 3 wines from Lagoa and 3 wines from Tavira.With this objective, analyzes were carried out on 8 physical-chemical parameters: Total Acidity, Volatile Acidity, pH, Alcohol Content, Total Polyphenol Index, Anthocyanins, Tannins and Color.After carrying out the analyses, the means and standard deviations of the respective samples were calculated for each parameter analyzed to compare the wines with each other.To verify the existence of significant differences between the regions under study, a statistical analysis was carried out using the one-way ANOVA method and the Scheffé test from the STATISTICA 7 (StatSoft Inc., USA) program, having found significant differences in the parameter: volatile acidity, pH, anthocyanins, total polyphenol index, tannins and color tone. | |
